Orange Chicken

This is a receipe that I discovered recently, and my boyfriend requests it weekly. We had a craving for chinese food, but didn't want to spend a lot of money. My boyfriend requested orange chicken and I found this easy receipe.

Here is what you will need

Chicken breasts or theighs
Orange Marmalade
BBQ Sauce
Soy Sauce
Egg
Flour
oil

Whisk Together 2 eggs in bowl 1
In bowl 2 put flour
Cut chicken into pieces. If I'm using breasts I will use 3, if I am using theighs I will use the whole pack
Dredge chicken in the egg and flour mixture and place in hot oil to deep fry

Side Note: I am the worst at deep frying, I panic and I can never get that golden color, so I always get my boyfriend to do it

While the chicken is cooking put ! cup of Marmalade and 1 Cup of bbq sauce in a pan with 1 tbsp of soy sauce. Stir on medium heat.
The sauce will gradually boil and thicken, remember to stir frequently.
Place the cooked chicken on a paper towel to drain the excess grease
once the chicken has cooled mix into the sauce and mix thoroughly. I like to cook it a little more once it is in the sauce.

Serve with rice

Welcome back to another what I ate Wednesday, I'm back to my healthy lifestyle and trying to get back in the swing of things.

I started my day off with a cup of coffee and a homemade fruit parfait. I used plain stirred yogurt, with chocolate protein granola and sliced bananas on top. This is a breakfast I have started having for the past few days. I love bananas on mine, but you can use any fruit you have.



For my morning snack I had a samosa with a glass of water


For lunch I had rice with green peas (which my mom made) and yogurt on the side, with a glass of water.


For my afternoon snack I had plain green tea, with 2 dates and no sugar added yogurt and the flavor was key lime pie.




Dinner was a favorite of my boyfriends. It was homemade orange chicken with homemade vegetable fried rice. My boyfriend deep fried the chicken while I made the sauce and rice.


Stuffed Chicken

Hey Guys!

Im back with another receipe, and today it is stuffed chicken. This is another family favorite and a receipe that I made my own with my own experimentation and some ideas from my boyfriend's mother.

Here are the things you will need

Chicken Breasts
Cream Cheese
Green Peppers
Onion
Parsely
Bacon (Optional)

I usually make 3 chicken breasts so my boyfriend can take it to work the next day.
I cut the chicken breasts to make a pocket, so the stuffing can go in
I do 1 tbsp of cream cheese for every chicken breast.
mix cream cheese, diced green peppers and diced onions
Stuff each chicken breast. I like to stuff it till it is overflowing and sprinkle parsley on top
If you want you can wrap each chicken breast in bacon

Put in a 450 degree oven for 30-40 min

My chicken comes out moist every time, and everyone loves it. I have done it with just cream cheese as well, but when I add the vegetables it makes it a little more filling so much more flavor.

Pesto Pasta

It's no secret that I love pasta, but a homemade lasagna or a meat pasta can be quite heavy during the spring/summer months. My go to pasta is noodles with grilled chicken, pesto and feta.

I take 2-3 chicken breasts and throw them on the grill. I season them with seasoning salt, parsley, pepper and a tiny bit of oregano. 
Take whichever noodles you like, (my family loves corkscrew pasta), and boil them to your desire.
When the chicken is done chop it into pieces, and add to the drained pasta.
Mix in pesto( I do half the container because I love pesto) and add crumbled feta.

I add a salad or garlic bread depending on what my family wants.

What I Ate Wednesday (04/13/2016)

 Today started off with a basic breakfast. I had shreddies with whole milk ( it is what we have in the house because of our toddler) and coffee


For lunch I had rajma chawal with yogurt, which is an indian dish. I had made basmati rice a few days before, and my mom had made the rajma, and i brought home the leftovers the last time I visited my parents. I also had 3 glasses of water.


This isn't the norm. For a snack (which I don't think you can see) was a butter cookie in the shape of a mushroom, with the topped dipped in chocolate. We had gone to a bakery earlier in the day, to put in an order for a cake, and decided to pick up a few treats.


For dinner, we picked up a roasted chicken, and I had the breast, which is my favorite part. I also made fresh basmati rice, and put some pepper and butter on it. I had leftover broccoli from a previous meal, and put butter and pepper on as well. I also made a salad, which wasn't spectacular, I didn't realize we had veges at home when I had planned the salad, so I cut up some romaine lettuce and put some ranch dressing on it. Half of my plate was veges with a 1/4 carbs and a 1/4 protein. I also had 3 glasses of water.

I picked up some oreos today ( indulgence) and I can already tell you, i will be devouring them later.
