Cornbread Recipe

Hey Guys!

So growing up there are a few recipes that my boyfriend loves. If you read my recipe post last week, I posted a recipe for beans, and I mentioned that freshly baked cornbread is always on hand with this dish. I usually bake cornbread in large batches and freeze some for later, because it is so handy to have, and it goes with so many dishes. I found this recipe while looking up 1 year old friendly meals for Kayden. My boyfriend was skeptical I could bake cornbread from scratch, but I was determined to prove him wrong. He even bought a prepackaged cornbread mix from Bulk Barn, which went horribly wrong. I told him to keep an open mind, I baked this, and he loved it!

Ingredients
Cornmeal 1 Cup
Flour 1 Cup
Sugar 1/2 Cup
Buttermilk 1 Cup
Eggs 2
Baking Soda 1/2 tsp
Salt 1/2 tsp
Melted Butter 1/2 cup

Steps
Preheat Oven to 375 Degrees
Mix butter and sugar in a bowl, then add eggs and buttermilk(  Heres a tip! There have been times when my local grocery store is out of buttermilk, use regular milk, and add some lemon to it. Let it sit for 5 minutes and you will see is transform into buttermilk.)
In another bowl add flour, cornmeal, baking soda and salt
Combine ingredients

Pour in pan or muffin tin. It takes about 30 minutes to bake, but I always check at the 20 minute mark, and make sure that the top is golden brown.

I got this recipe from pinterest which got it from The Cupcake Diaries. She had added cut up hot dogs in the middle to make it a child friendly meal. My son loves cornbread, it is always the first thing he eats on his plate, and always wants more! I had never had cornbread before baking this recipe, and I will admit it, I fall in love with it every time I bake it.

Hey Guys!

So today I am going to share a beans recipe. I got this recipe from my boyfriends mother. We were going through a hard time and we didn't know what to make. I called her up to get some ideas and she told us to make beans, it brought back great memories for my boyfriend since he ate beans growing up. It is such a simple recipe, but so delicious! It has turned into one of my favorites.

Ingredients
Beans ( We use black beans and kidney beans)
Garlic
Onions
Meat
Seasoning

Steps
We buy black beans in a bag, so we soak them for about 2-3 hours ( we usually use about half the bag)
Take a large pot and cover the beans with water (cook on high)
Cut up a whole onion, and a head of garlic, add it to the beans
I use whatever meat we have in the fridge. We have used pepperoni, sausage, turkey etc. so feel free to add anything you would enjoy.
let the beans simmer, and add water once the water level goes down (cook on medium)
I add spices as well, I use whatever I have. Last time I made beans I used, pepper, seasoning salt, oregano and parsley. I don't measure the amount of spices I add, I just eyeball it.
I let this simmer for about an hour and a half
I add the canned kidney beans at the end, because it takes less time to cook. I let this simmer for 30-60 min.
 

I serve this on top of rice with hot sauce and a side of cornbread.

My boyfriend has made this in the crockpot as well, and it turned out as delicious. We always make a big pot of it, and freeze some because it is such a favorite. My son loves it as well, he goes crazy for beans. This is the type of recipe where you can put it on the stove and check it periodically to see if the beans has soaked up the water.

Blueberry Muffin Recipe

Hey Guys!

As you can tell by the title, this post is a blueberry recipe. I will admit, I am not the biggest blueberry fan, but my boyfriend loves it. When I was younger, i was obsessed with blueberry muffins, I would eat them all the time, to the point, where I am now sick of them!

I found this recipe on pinterest, and made these when I had people over one day. They were obsessed with them, they even took them home! Now that my boyfriend is working night shifts, his schedule is a bit off. When he wakes up to start his shift, I like to give him quick foods that he doesn't have to waste time on. In all honesty, baked breakfast goods is the answer.

I have tried these muffins, and they are actually delicious, and this is coming from someone who doesn't like blueberries! The recipe claims its a bakery style muffin, and my boyfriend agrees!

Ingredients

2 1/4 cups of blueberries ( i personally think this is to many, I did find I had a lot leftover because my batter was overflowing with blueberries)
2 large eggs
2 tsp baking powder
1 3/16 cup granulated sugar
1/2 tsp salt
1 tsp vanilla extract
1/2 cup butter
1/2 cup milk
2 cups all purpose flour

Preheat oven to 375 degrees and line your muffin trays
mix flour, baking powder and salt
in another bowl beat butter and sugar
add 1 egg at a time, and beat after each egg
add vanilla extract
add half the flour and milk, and mix
repeat
add the blueberries slowly, break it up in thirds or do half at a time
fold the blueberries in
put in muffin liners, and sprinkle with sugar on top
bake for 30 minutes

The one thing I love about the recipe is how easy it is, and how all these ingredients, I usually have in my house.

Banana Pudding Recipe

Hey Guys!

Here we go again, with another amazing recipe from my boyfriend. He introduced banana pudding to me, and to be honest, at first I was a bit hesitant. I am not the biggest banana fan, but I decided to give it a try. He got this recipe from his mother, who is an amazing cook and baker. This is amazing, anyone who comes over and tries it falls in love with it. I guarantee that you cant have just one bite!

Ingredients

Nilla Wafers (vanilla)
2 packs of instant banana pudding
whip cream
bananas

Steps

On the stovetop cook banana pudding according to directions
All this recipe is, is assembling, which makes it so easy.

Get a large container, and place wafers at the bottom.
 Cut bananas thinly, and place on top of the wafers.
Take pudding and spread on top
Cover with whip cream
 Repeat at least once
 My boyfriend usually does 2 layers, and sprinkles crumbled wafers on top.

Fish Tacos

So Fish tacos was something that was introduced to me recently. My boyfriend isn't the biggest fish person, so this was a great way to incorporate this into our diet. It is such a simple recipe, and the only thing that takes long is frying the fish. We make this meal in about 30 minutes.

Ingredients
Corn tortillas
fish
coleslaw
lime juice
cilantro
tartar sauce

Steps
Take whichever fish you like, some recommend a sturdy fish, but I have had no issues with basa. We fry it by dipping it in milk then coating it with flour. How much you need is entirely up to you, we use about 1 pack.
Chop up the cilantro and set aside. Once again this is up to you how much you need. My boyfriend and I love cilantro, so the more the better.
We buy store bough coleslaw, so we just place that in the bowl.
I found a great tartar sauce recipe so I make that homemade, but its entirely fine to buy it.
One the fish is done frying set on a paper towel to drain the excess grease.
I assemble my tacos this way - warm corn tortilla, place fish on top and squeeze lime juice, top with coleslaw, drizzle tartar sauce and finish with cilantro. I love this!!! I go extra with the sauce and coleslaw. I can't get enough of these, and I easily eat 3. It is such a quick weeknight meal. Kayden loves fish, so this is great for him.

Shepherd's Pie

Hey Guys!

This recipe is actually my boyfriend's. He got it from a previous relationship, and I am in love with it. It is so delicious and creamy, I honestly cant get enough of it.

Ingredients

Ground Beef/ Turkey
onions
garlic
Vegetables
Cream of mushroom soup
mashed potatoes
shredded cheddar cheese
Club house shepherd's pie seasons pack (optional)

Steps

1. Cook the ground beef/turkey in a pan. I personaly will always try to use ground turkey because it is leaner. I add half an onion diced and 2-3 cloves of garlic. If adding shepherd's pie seasoning, do so now
2. Boil potatoes in a pot, about 8-10. Just a tip, I cut them into pieces so it boils faster. Once potatoes are done cooking, mash and make to your desired taste. I like adding black pepper, sour cream and some milk. It makes it super creamy
3. I use frozen mixed vegetables because it is faster, but you could always cut up carrots, and add peas and corn. Because I use frozen vegetables i cook them, then drain and set aside.

Assembly

I put the ground meat at the bottom, vegetables, mushroom soup, potatoes and grated cheese.
The amount of potatoes and cheese you add is entirely up to you. My family loves extra potatoes and cheese so we probably put way to much then we should.

As i have said we love this recipe, we make this at least twice a month and it is all gone within 2 days!! I hope you all try this recipe tonight!

Banana Bread

Growing up I use to eat banana bread all the time. Ironically banana's are a staple in my house. Everyone love's bananas, we eat them for breakfast and a snack. I had tried a banana bread recipe last year, but something was missing, until I stumbled across this recipe. I found this on pinterest and it was so easy and delicious.

Ingredients

3 Large Bananas
1 Cup of I cant beleive its not butter ( I've used regular butter, and it worked perfectly)
3/4 cup of brown sugar
2 Large eggs
1tsp vanilla extract
2 cups of all purpose flour
1 tsp baking soda
1tsp cinnamon
1/4 tsp salt

Steps

  1. Preheat oven to 350°. Brush 9 x 5-inch loaf pan with additional I Can't Believe It's Not Butter!® Spread; set aside.
  2. Combine mashed banana, I Can't Believe It's Not Butter!® Spread, brown sugar, eggs and vanilla in large bowl with wooden spoon. Stir in remaining ingredients until blended. Spoon into prepared pan*.
  3. Bake 1 hour to 1 hour 10 minutes until toothpick inserted in center comes out clean. Cool 20 minutes on wire rack; remove from pan and cool completely. If desired, top with Vanilla Glaze.
The vanilla glaze really took the recipe over the top. Everyone that tried it said that is what sets this banana bread apart.

The last time I baked this I did muffins, and in about 20 min it was done, and tasted just as good.

Chicken Cesar Salad

Hey Guys!

With summer coming up I love eating lighter. One of my boyfriend's and mine favorite salads are a Cesar salad. It is filling and super delicious. take a peek with how I make it

2 Chicken Breasts
Seasoning
Romaine Lettuce (3 hearts)
Pepper
Parmesan Cheese
Croutons
Lemon ( Optional)

I put the breasts in the pan with a little bit of oil, or you can grill them.
 season them with pepper, seasoning salt and some parsley.
Put bacon in the pan if you are including it in your salad.
Put bacon aside after cooking, to drain the excess grease
Cut romaine lettuce and add croutons, Parmesan cheese, pepper and Cesar dressing. ( Add to your desire)
My boyfriend loves lots of dressing and a little but of croutons. - - add to your taste
Cut up the bacon and mix it in
I like my chicken sliced and placed on top, whereas my boyfriend likes to mix it in, so I plate mine first with the chicken, then I cut his chicken up and mix it in the salad.
I like taking a Lemon wedge and squeezing it over my salad, it really does take the salad to another level when you do this.

Fried Rice

Hey Guys!

Here we go with another recipe that my family enjoys. I came across this recipe one day, because my boyfriend requested fried rice, I didn't think it would be to difficult to make and I was right! This was so easy to make and it wasn't filled with MSG!

Ingredients

Rice ( preferably leftovers 2 cups)
Garlic (2 gloves diced)
Green Onions (2-3)
Ginger ( up to 1 tbsp, depending on your preference)
Soy sauce ( 1 tbsp)
Vegetable Oil
Vegatables(1 cup frozen vegetables)
Meat (optional)

The first time I made this recipe I made it with meat, but the recipe I am going to do will just be vegetable friend rice. If you want to use meat, put it in the pan and cook it to your desire, then set aside.

Take Garlic, green onions and ginger and put in pan along with the oil.
After they have sweated out add in the vegetables and cook for a few minutes. I like using frozen vegetables because they are quick and easy, I will steam them then add them to the pan.
Mix in the rice and toss with ingredients, cook for a few minutes
If you are using meat, add the cooked meat in now
Add soy sauce. I add tons because my boyfriend loves it

I let it cook until i see a little bit of color on the rice and it looks crispy. I do occasionally add more oil to the pan so I can get that nice crunch on it.

Stuffed Chicken

Hey Guys!

Im back with another receipe, and today it is stuffed chicken. This is another family favorite and a receipe that I made my own with my own experimentation and some ideas from my boyfriend's mother.

Here are the things you will need

Chicken Breasts
Cream Cheese
Green Peppers
Onion
Parsely
Bacon (Optional)

I usually make 3 chicken breasts so my boyfriend can take it to work the next day.
I cut the chicken breasts to make a pocket, so the stuffing can go in
I do 1 tbsp of cream cheese for every chicken breast.
mix cream cheese, diced green peppers and diced onions
Stuff each chicken breast. I like to stuff it till it is overflowing and sprinkle parsley on top
If you want you can wrap each chicken breast in bacon

Put in a 450 degree oven for 30-40 min

My chicken comes out moist every time, and everyone loves it. I have done it with just cream cheese as well, but when I add the vegetables it makes it a little more filling so much more flavor.
